Carburetor temperatures

Measured my Carb running temperature yesterday for the purposes of finding out what is causing my hot restart problems (Weber 500 on a P6B) and found that my heat insulator gasket does a great job but that when the carb gets to about 35 to 37 degress the car wont restart, this is with a fully warmed engine (82 degree theromstat) and 82 degrees measured on the inlet manifold, once the the car wont restart the temperature drifts upto about 50 degrees before trending down to 32 -33 where the engine will then restart (an hour or 2 later), All my measurments were taken with an ir thermometer and seem to be accurate (82 degree thermo and 82 measured).

I just cant beleive how cool the carb has to be for normal; running, has any one else measured their carb temperatures?? and do any other weber owners have any temperature problems that they couls check in the same way, any help much appriciated.
