There is a press and collars which is used to pull the bearing off without damage, but if you're replacing the bearings anyway, then damaging the old bearing getting it off isn't going to cause you any problems if you're careful, as far as I can see. Then you just need a spring balance to set up the collapsable spacer on reassembly.
PS Ideally you'd have a workshop press handy, but I'm sure that a carefully wielded Hickory Handled Press will suffice. I have to say it's a very long time since I did one though, so my memory may be failing me.
